2 tablespoons olive oil (divided) -
8 medium (8-ounces) shrimp, peeled, deveined 和 tails removed -

Microwave frozen “riced” cauliflower according to package directions, usually about 5-6 minutes; set aside. -
加热1汤匙. olive oil in a medium nonstick pan over medium heat. Add the shrimp 和 cook 2 to 3 minutes per side until light pink 和 opaque. Place shrimp in a small bowl 和 season with cumin, lime zest, 和 salt. -
Add remaining oil into the pan. Add onion 和 cook, stirring occasionally, until onion is soft, about 2 minutes. Add garlic 和 avocado 和 cook for one minute, until heated through. -
Transfer avocado onion mixture into a blender or food processor 和 add lime juice. Cover 和 blend until smooth, stirring mixture with a spatula if needed. -
Transfer heated “riced” cauliflower into the pan 和 top with pureed avocado onion mixture. Cook over medium heat, stirring gently until cauliflower has a beautiful green color. -
Divide into two bowls 和 top with cooked shrimp.
